In 2004, the Weihenstephan Research Center for Brewing and Food Quality was established in its present form. It was formerly known as the State Brewing Technology Testing and Experimental Station Weihenstephan and was made a direct subsidiary of the Technische Universität München following the reorganization.

Independent of any specific industry interests, the Research Center is accepted as a neutral and competent partner of the brewing and beverage industries, food producers, associated suppliers, regulatory authorities and allied trade organizations.

 

 

The six departments of the Research Center work in close cooperation with one another:

• Consulting
• Research and development
• Microbiological laboratory / yeast center
• Laboratory for chemical and technical analysis
• Laboratory for analytical measurements
• Hygienic Design

For those seeking answers, the synergy among the departments at the Research Center guarantees rapid results and sound advice in response to questions and in finding solutions to problems.

Practical Application & Teaching

The transfer of knowledge gained in the field to research and education is of particular significance to the Research Center.

Our consulting engineers are able to draw on the practical insight gathered over many years of experience. Their input both enriches and complements the university lecture material, substantially contributing to the quality of education at the TUM-Weihenstephan. In many cases, the engineers offer their assistance in finding solutions to the problems and questions encountered by those performing research at the TUM. Additionally, they are able to indicate areas where further research is needed or propose entirely new topics for research. Likewise, the engineers at the Research Center put the latest scientific findings into practice in their consultant work, thereby allowing them to identify suitable applications in the industry for new findings.

Research & Development

The numerous and interesting questions arising over the course of their consultant work also form the basis for semester papers and masters’ theses. Working in an advisory capacity with upper division students as well as with PhD candidates is an important part of the work performed in the Research and Development department at the Research Center.

Consulting & Services

In addition to consulting, the Research Center offers a wide range of services in the form of laboratory analysis and testing to more than 600 companies worldwide. With our pilot brewery, it is possible to brew beer of any kind, either in accordance with the German Purity Law (Reinheitsgebot) or otherwise. Unmalted cereals and/or indigenous starch sources from around the world can be used to brew beer on the pilot system. It is also possible to produce any type of beverage made entirely or partially from malt, with or without fermentation.

Quality and Standards

All laboratories at the Research Center are accredited and certified to perform analysis and testing according to all current DIN/EN standards.
